Memorial Day is just around the corner. Celebrate with a delicious meal! Here are a few flavorful recipes that your family and friends are sure to enjoy.
Buffalo Cole Slaw
You’ll need: 1/2 head of green cabbage (thinly sliced), 1/2 white onion (thinly sliced), 4 stalks of celery (chopped into small pieces), 2 medium carrots (grated), 1 cup of crumbled blue cheese (divided), and 1 teaspoon of chopped chives
Dressing: 1/4 cup of mayonnaise, 1/4 cup of hot sauce, 1/4 cup of apple cider vinegar, 1 teaspoon of garlic powder, 1/2 teaspoon of kosher salt
Step 1: Grab a large bowl and combine the onion, carrots, celery, cabbage, and 3/4 cup of blue cheese. Stir these ingredients until well combined.
Step 2: In a medium bowl, combine the hot sauce, mayonnaise, vinegar, kosher salt, and garlic powder. Whisk together until combined.
Step 3: Next, pour the dressing over cole slaw mixture. Then, take salad tongs and toss. Once covered, garnish the cole slaw with chives and sprinkle the remaining blue cheese on top. Serve and enjoy.
You’ll need: 3 pounds of gold potatoes (chopped), 4 hard boiled eggs (chopped), 1 small red onion (finely chopped), 1 tablespoon of Dijon mustard, 1/4 cup of chopped pickles, 1/4 cup of finely chopped chives, 1/2 teaspoon of paprika, 1 1/2 cup of mayonnaise, 1 teaspoon of lemon juice, kosher salt, freshly ground black pepper, and butterhead lettuce
Step 1: Take a large pot and cover the potatoes with water. Season generously with salt. Then, bring the water to a boil and cook the potatoes for about 15 minutes. (The should be easy to peel when done.) Drain the water from the potatoes and allow them to slightly cool.Step 2: In a large bowl, combine the Dijon mustard, red onion, mayonnaise, pickles, lemon juice, and paprika. Then, stir the mixture until well combined.
Step 3: Next, fold in the cooked potatoes, chives, and chopped eggs. Once mixed, season the potato salad to taste with salt and pepper.
Step 4: Refrigerate the potato salad until you’re ready to serve. Then, serve over butterhead lettuce.
Pineapple Bun Burgers
You’ll need: 8 pineapple rings, 1 pound of ground beef, 4 pieces of romaine lettuce, 1 large red onion (sliced into rings), 4 slices pepper jack, 8 slices of cooked bacon, 1 tablespoon of Worcestershire sauce, Freshly ground black pepper, and kosher salt
Step 1: Start by heating the grill to medium-high temperature. Then, take a large bowl and combine the Worcestershire and ground beef.
Step 2: Season the ground beef with salt and pepper. Then, form the meat into 4 patties.
